“Pause + Savour” Dining Event Launches at Le Méridien Saigon

Pause + Savour is a new series of Chefs' Table events that will celebrate the diverse international cuisine that Saigoneers crave via collaborations with premier international chefs visiting Le Méridien Saigon from global food meccas.

For each Pause + Savor event, Le Méridien Saigon's award-winning Executive Chef Phi Công will collaborate with a foreign chef to bring a unique fusion of culture-spaning culinary traditions to guests at the hotel's dining outlets. This ambitious undertaking will rely on the Marriot's many partnerships in Vietnam and worldwide.

2024's Pause + Savor events will focus on flavors from Asia such as the iconic cuisines of Hong Kong, Taiwan, and Japan. The first iteration will explore South Korea's culinary elegance with the help of Executive Chef Theo Park of Le Méridien Seoul Myeongdong. More than two decades of fine dining experience at prestigious international hotels has given him an intimacy with South Korean ingredients and preparation that he is eager to infuse with Vietnamese techniques and tastes for diners in Saigon. 

Highlighting the best of Korean and Vietnamese cuisine, "Seoul Inspiration" will run from April 22 to April 28, with dining experiences at BARSON and Latest Recipe Saigon. The meals will not transport guests to Seoul, but instead to an imaginative land constructed with meticulously selected elements of both South Korean and Vietnamese culinary legacies. 

The trendy, food-focused ground floor vibe dining BARSON will host a Chefs' Table Tasting Dinner designed exclusively by the pair of chefs on April 25, 26, and 27. Their creativity will be enhanced and elevated by the pairings provided by Le Méridien Saigon's Head of Sommelier, Hà Huyền. Reservations can be made for April 26 and April 27 with or without wine pairing. 

Meanwhile, Latest Recipe, a venue known throughout Saigon for its incredibly indulgent brunches and buffets with an inspiring view of the Saigon River will allow Chef Theo Park to explore Korean fare in the Vietnamese context. His special Korean Buffet Dinner on April 25, 26, and 27 will emphasize Seoul-style seafood as well as a wide range of colorful and unique dishes that exemplify Seoul's proud style. It's an ideal way to explore the eclectic and enticing world of Korean cuisine as made possible by visiting Korean chefs.
