The restaurant is designed by Dix design+architecture, a compact 14-seat counter, open kitchen and adjoining 4-seat bespoke cocktail bar, featuring custom beef bone brass door handles and handmade ceramic tiles spotlighting the iconic pho spoon.

The creation of Pot Au Phở 2.0 heralds an exciting new chapter of Chef Peter’s decade-long quest to elevate phở, Vietnam’s national dish to new heights. Elevating traditional Vietnamese noodle dishes, especially phở, through high quality ingredients, refined techniques, modern fine-dining presentation and transforming a national comfort food dish into a recognized culinary art form. Pot Au Phở 2.0 is a modern phở restaurant inspired by Vietnamese and French culinary culture with just 14 counter seats in an intimate, sophisticated open environment where guests can experience the chefs and bartenders in action.
Expect a menu of flavorful small plates, aromatic and expertly crafted consommé phở, inventive cocktails and curated wine pairings. Phở 2.0 Tasting Menu is a culinary journey with innovative dishes such as Caviar Egg Phở, One Bite Molecular Phở, Pâté Chaud, Black Chicken Phở and the pièce de resistance Le Pot Au Phở inspired by Paul Bocuse's legendary VGE truffle soup.
CHEF PETER CƯỜNG FRANKLIN
Peter Cường is a Vietnamese American chef who was born and raised in Dalat in central Vietnam and trained at the prestigious Le Cordon Bleu and world-famous restaurants including Caprice in Hong Kong, Alinea in Chicago and Nahm in Bangkok. This noodle restaurant is close to Chef Peter’s heart and pays homage to his first restaurant in Hong Kong, a small phở noodle bar, which he opened more than a decade ago. Pot Au Phở 2.0 menu also pays tribute to Chef Peter’s mother who runs a traditional noodle shop in Dalat in central Vietnam and famous for her Mì Quảng turmeric noodle soup.
