Founded by sommelier Triết Nguyễn, the restaurant is named after the Vietnamese word for “color”, which expresses its location and broader philosophy. Located opposite the culturally significant Temple of Literature and surrounded by streets closely tied to painting and colors, MÀU serves as an intersection of art, culinary excellence, and wine.
Triết shared that, “The Chẩm Chéo ravioli clearly reflects how my team and I approach gastronomy: respecting local ingredients and authentic flavors, yet presenting them through a fresh, contemporary lens.”
Crafted by Head Chef Long Nguyễn and his culinary team, the dish embodies the intersection of global influences and Vietnamese heritages, offering a familiar but unexpected experience.

The Chẩm Chéo features handmade ravioli filled with beef ragu and velvety cream cheese, balanced by naturally sweet vegetable consommé. The finishing touch comes from chẩm chéo oil, a beloved condiment from Vietnam's Northwest, which adds aromatic complexity while imbuing the dish with a distinctive local identity. Paired with one of the wines selected by Triết, a WSET Level 3-certified sommelier brings the dish to life with remarkable vibrancy. As a cohesive whole, it captures the harmony and depth of flavour that he and his team seek to express in every creation.

As for the stracciatella cheese, MÀU’s version provides a creative twist by featuring green sorbet in the middle of the cheese, served alongside refreshing tomatoes and green grapes. The dish is a harmonious blend of flavors and a playful medley of colors: the pristine white of the cheese, the vibrant red of the tomatoes, and the fresh green of the grapes. Thus, the stracciatella also embodies the free, diverse, and inspiring spirit of MÀU - Gastro Wine Bar.
