Dine on pearch, ricotta and bell pepper tian, orange olive oil Sabayon (paired with Champagne Moët Impérial ), lobster tortelli, cauliflower and asparagus Cous Cous, (paired with Champagne Moët Rosé), and tournedos of veal with torched Balsamic duck liver, Sogliano Fossa cheese, carrot flan and black truffle (paired with Champagne Grand Vintage 2004 - 2006).
