Akuna’s latest chapter in the much-talked-about Mates’ Mash-Up series is set to bring acclaimed Thai chef Thitid “Ton” Tassanakajohn to Vietnam, where he will join his long-time friend and peer, Sam Aisbett, for a one-night-only six-course dinner on 15 November 2025. Chef Ton, the award-winning force behind Asia’s 50 Best restaurants listed Le Du and Nusara, will team up with Chef Aisbett. Expect a menu that balances mastery and mischief, where two distinct cooking styles meet in a shared celebration of the ingredients and flavours from the places they call home.
The sixth edition continues the restaurant’s tradition of uniting some of the most influential names in gastronomy — mates and mentors who have shaped Chef Sam’s culinary journey. Previous sold-out editions have featured collaborations with Rishi Naleendra (Cloudstreet), Sun Kim (Meta), Peter Gilmore (Quay), Kenjiro “Hatch” Hashida (Hashida), and, most recently, Aitor Jeronimo Orive (Sugarra) and Shane Osborn (Arcane).
Known for his ‘no-rules’ approach to fine dining, Chef Sam draws on his Australian roots and myriad culinary experiences to shape a cuisine that breaks boundaries. At Akuna, he pushes this philosophy further, embracing the creative possibilities in Vietnam’s culinary landscape. His dishes champion indigenous ingredients and rare native flavours, many of which appear in a fine dining context for the very first time. Every course carries his rebellious streak, challenging norms in a style that is bold, personal and unapologetically authentic.
Chef Ton is easily one of Thailand’s most awarded chefs, helming a restaurant empire that spans from fine casual to fine dining, across multiple Michelin stars. The dynamic young chef leads two of Bangkok’s most exciting kitchens, Le Du (1 Michelin star and #1 on Asia’s 50 Best Restaurants 2023), and Nusara (#3 on Asia’s 50 Best Restaurants 2023) — making him the only Thai chef to have had two restaurants ranked at the very top of the prestigious list. His brand of cuisine showcases a deep respect for Thai produce, the elevation of heritage family recipes, and a level of hospitality that is second to none.
