Amid the jubilant year-end spirit filling the city, Vietnam House Restaurant presents its 2025 festive menu, a refined selection inspired by the essence of Vietnamese gastronomy and elevated through contemporary culinary techniques. Crafted with meticulously chosen ingredients, artful presentation, and deep-rooted local inspiration, the menu offers a warm and fulfilling culinary experience, perfect for heartfelt gatherings throughout the festive season.
The festive menu will be served from 23 December 2025 to 01 January 2026.
The culinary journey begins with the refined essence of Vietnamese gastronomy. Opening the menu is the Chilled cured carp coll, paired with “chẩm chéo”, Hải Phòng crouton, ming aralia, and truffle pearls. The dish harmoniously blends the natural sweetness of carp roll with the gentle savouriness of “chẩm chéo” and the luxurious aroma of truffle, evoking the spirit of Vietnam’s Northwest region through a contemporary lens.
Continuing the journey is the Char-grilled Iberico pork skewer, inspired by Central Vietnam’s iconic Đông Ba nem lụi. Finely ground Iberico pork is molded around a lemongrass stalk and grilled until fragrant, then served with “bánh hỏi”, fresh herbs and light fish sauce. The dish offers a delicate balance that complements the aroma, colour, and flavours of Vietnamese cuisine.
Following the appetizer is the Hokkaido scallop soup featuring yacón, purple yam, and sawtooth-coriander oil, bringing a silky texture and warm, comforting flavours. Guests may opt to add caviar for enhanced depth and an elevated touch of luxury.
The two main courses present two vivid, expressive interpretations of Vietnamese flavours. The Chicken roulade stuffed with pork paste, shiitake mushroom, lotus seed purée, inspired by Hanoi’s traditional stuffed chicken, reflects the spirit of Northern Vietnamese cuisine through its multilayered textures and refined, harmonious flavours. Meanwhile, the Char-grilled sea tiger prawn with salted plum and lime reduction combines the firm natural sweetness of the prawn with a signature blend of plum, chilli and lemongrass, delivering an enticing balance of sweet, salty, and gently spicy notes.
The journey concludes on a sweet note with a Raspberry mousse cake, offering a silky texture, the bright tartness of raspberries, and the gentle sweetness of white chocolate. The dessert leaves a soft, refined finish, like a delicate wish of warmth and joy for the festive season.
